It's okay to say no. In fact, it's a necessity. No to invites, no to allocations, no to tastings, no to reps, etc. That way you can narrow your focus and be fully present for what you say yes to.

A mentor of mine taught me that a great chef isn’t the one who can cook the best fish, it’s the one who can bring out the best in the people around them.

While certain experiences may be required, when hiring, I also look for someone with inviting energy and genuine attitude.

Motivation starts with culture. I focus on building trust, celebrating successes, and giving team members ownership over their work. Education comes naturally when people feel empowered to try, fail, and learn in a safe environment.

When hiring, I look for vulnerability and self-awareness. You can teach skill, but you can’t teach someone to be honest with themselves.
