I truly enjoy seeing happy faces.
I love to create and it starts with my staff. If they react excitedly about a dish, drink or idea, I know they will take that energy to create smiling faces all throughout the dining room.
When hiring, I look to see whether someone cares.
It really is the only thing I can’t teach an individual. I ask them to tell stories about how they solved a situation or helped a customer. I want to see if they have empathy.
Every mentor I have worked with has always told me that I should be learning about food every day.
That could mean reading a magazine, cookbook, blog or just looking up terms and ingredients that I need more knowledge on. Always be a student!!!
The highlight of my career (so far) has been our six James Beard Nominations over the past 8 years, which are greatly due to the team and all the hard work they do every day.
One thing I can’t live without to do my job is our custom built Curing Case.
We age all our charcuterie and steaks in that thing.
