I found out the hard way that honesty and trust in the kitchen are integral.

Find solace in a great mentor and work for them for several years.
Learn as much as possible from them. If you can’t find a mentor, you’re not looking hard enough.
Cesar Ramirez taught me how to be a great cook; fundamentals, seasoning and basic techniques.
Cook from your gut, use your palate, build your memory.
Daniel Humm taught me organization, discipline, the importance of seasoning with acid, and showed me how to be a great leader.
Stick it out and have some patience.
It’s good to find a place to put your roots down. Find a good company with a good culture and give it your all. If you give yourself fully to that restaurant and that team, you’re going to get a lot more in return.
