Cedric Nicaise gave me a piece of advice that’s always stuck with me:
"Always try to surround yourself with people who push you. When you stop to look around and there's no one pushing you, maybe it's your turn to pull someone else up."
When hiring, I look for people who care and take pride in their work.
Literally just about everything else can be taught, but you can't teach someone to care to be better than they were the day before.
I find inspiration in a lot of artistic fields outside of hospitality, great authors, musicians, filmmakers -- people who are passionate about their craft and have a strong voice.
Italo Calvino, Thom Yorke, and Paul Thomas Anderson all come immediately to mind.
When it comes to software that I rely heavily on, this is probably a pretty obvious one in my field, Binwise.
For overseeing multiple wine programs there's really no more useful tool.
A short meditation before bed is a must for me.
It helps to calm my mind from the frenetic energy of service and de-stress before this most crucial period of the day. There's tons of scientific evidence behind the benefits of mindfulness practices and I'd urge everyone to look into adopting some form of it into their daily routine.
