Sous-vide is French for 'under vacuum' and is the method of cooking where food is placed in a food-grade plastic bag, has the air removed, and is then cooked in a water bath. The Sous-vide technique allows you to cook food at a specific and consistent temperature. Developed during the late 1700s, Sous-vide has increased in popularity as the equipment has become more readily available.
