We do everything from scratch at the Hungry Pigeon, and knowing how to use fresh produce and handle it properly without it being a chore is a must.
I open myself to a lot of input not coming from a pastry background.
I consider myself a part of my production team, and together we have a job to do. There is no job that is too small for me, like scooping chocolate chip cookies and seeding grapes. I try to remove hierarchy in our business, which garners a lot of respect. We are all equals at the Hungry Pigeon.
All of our employees go through a stage.
They have to have the willingness to be humble and honest, and work as a team. We want them to feel empowered but cultivate our culture together so everyone gets something out of working with us.
I cannot do my job without time and space and my team!
