Invest in your own education and in the community.
Be an excellent listener.
Listen to what the guest means, not necessarily what they say. And if you are unclear on what they want, ask follow-up questions.
Educate constantly and make sure your team has the tools they need in order to be great.
For wines by the glass, taste as a group regularly. Build in the time to organize for education and inspiration. Bring in other professionals and points of view.
