Always be open to expanding your palette. Wine, steak tartare, tea, kombucha, uni, etc. Taste it all to sharpen the palette.
When hiring, I am consistently looking for someone who is invested in us for the long term.
Experience is important, of course, but we’re looking for people who are passionate about authentic hospitality. This spark is essential and can be found in a candidate who’s been in the industry for a year or so, not necessarily a decade.
The GM role is all-encompassing, but a few skills that I find important are:
data extrapolation, creative problem solving/adaptability, conflict resolution, relentless positivity, and leading by example.
I find it incredibly important to stay up-to-date with what other restaurants are doing.
I find so much inspiration by going out with friends and family, analyzing other concepts and determining what makes sense & what may not. What is something that we can implement to improve? Where are they sourcing their glassware? What guest amenities are they highlighting?
I am big on self care.
Typically you can find me in the gym or soaking in the sun on a walk. Lately, I have really been enjoying curating floral arrangements - at home and at Maison/Lutèce.
